How to Make Tahini Date Energy Balls
Ingredients:
- 1 cup dates, pitted. You’ll want soft dates like Medjool dates. Any dates work though, you just may need to soak them in warm water for about 30 minutes beforehand if they are not soft or sticky enough.
- 1/3 cup tahini
- 3 tbsp water
- 1/4 cup almonds (to mix in) + an optional 1/4 cup roughly chopped almonds to add in at the end – I like having a little chunk of almond in the centre of each energy ball, but this is totally optional. You can use raw or toasted almonds.
- 1/2 cup old fashioned rolled oats
- 1/4 cup unsweetened shredded coconut + more to roll in at the end
Directions:
- If you want to toast raw almonds for a more roasty, nutty flavour, bake them on a cookie sheet at 350°F for 10 minutes, stirring halfway through. Once out of the oven, let them cool fully.
2. Add dates, tahini, and water to food processor and blend until thoroughly smooth and creamy.
3. Add in 1/4 cup of almonds (raw or toasted), along with the oats and shredded coconut, and blend until fully mixed in.
4. Roll mixture into little bite-sized balls with your hands, incorporating the additional 1/4 cup of roughly chopped almonds in each ball as you go.
5. Roll balls in shredded coconut. Place on parchment paper.
6. Store in the fridge (for several weeks) or freezer (for several months).

How to store energy balls
Energy balls can be stored in an airtight container in the fridge or the freezer.
They will last for several weeks in the fridge, or several months in the freezer…if you can make them last that long! Honestly, these energy balls never last long enough for me to actually find out when they go bad!
They have an amazing texture when stored in the fridge, or when stored in the freezer and left to thaw a bit for a few minutes before eating.
They can also make a nice on-the-go snack, packed in a Tupperware. However, you don’t want to leave them out at room temperature for too long because they may get soft and more messy. Storing them in the freezer is probably best if you want to take them on the go.
Energy balls not holding together…
If the mixture is too crumbly and dry, you can add a bit more water, tahini, or even coconut oil to the tahini-date mixture. If not sticky enough, it may need more dates, or the dates may need to be softened by soaking in warm water beforehand.
If the mixture is too soft or moist, add more of the dry ingredients – nuts, oats, and shredded coconut.
The taste is not quite right…
If too sweet, add more of all ingredients except dates.
If too bitter, add more of all ingredients except tahini.
If too strong/concentrated in general, add more oats to mellow out the strong flavours from the dates and tahini.
